I am sorry you feel you have had a bad experience Jason. I am not sure why the edge is a little uneven, but I do everything by hand so there will be some variation. But it is rare that the edge would be that uneven after I sharpened it on the belt sander. I also try to be careful to not remove too much metal while using powered equipment but it can be difficult to get both sides perfectly even without making too many passes. So I try to find a balance of an edge that looks decent without too much metal gone. This is why, in my online form, under the notes at the bottom of the machine sharpening section (that you filled out when completing my online form) I put the disclaimer that states:
"By choosing machine sharpening, more metal will inherently be removed from the edge than if it were by hand only (although we do operate our belt sander at slow speed and it's liquid cooled) - We are not responsible unless it is an unreasonable amount which is determined by us."
For those that want minimal metal removal I offer the Wicked Edge service, and if you want a "perfect" edge (as even as possible by eye) then I offer a custom handling service. For a reprofiled edge with custom handling it runs in the range of $21/inch currently. I more than likely would have suggested this service had I known that was important to you, or at least, a Wicked Edge only service (as I still try to make all edges done on the Wicked Edge very even). Sometimes, in spite of the effort I put into it, edges will still be uneven due to the grind getting thicker at certain points or a bend in the edge or at the tip - not saying yours were by any means just throwing this out there.
Lastly, had I known you were at all dissatisfied I would have, and still am extending this offer to you to replace any of the knives I sharpened that you were not happy with and I will keep/sell those. All of my work I offer a sort of "satisfaction guarantee" and will do whatever I can to make my customers happy, even if that means buying them another knife.
