Thank you, I eat with it, it cuts everything, fruits, raw or cooked vegetables, meat, cheese ... I do not particularly seek to create a kind of patina on my knives, I let time and use do their work. It's fun and it gives very different results depending on the blades and steels.

I feel the same way, it’s fun to watch it develop. I never understood the forcing of patina, takes all the fun out of it. That said I won’t turn down an opportunity to cut some food even if the knife in my pocket isn’t the best one for the job!;)
