...Since we can only use one knife at a time, wouldn't it be better to spend, say, $1000 on one or two high quality knives rather then $75 to $100 each on 10 or 12 or more mediocre knives?

Better for some, but not for all I suppose. Some folks will get a kick out carrying and using a knife that cost $1k; for others it may be closer to $20. I say, whatever makes ya happy, go for it.
That being said, I think most folks get satisfaction out form, function, and perhaps sentimental value in a knife, rather than the actual price tag. One of my favorite EDC knives is a Small Sebenza Classic.
Did I buy it because it cost $300+? No.
Do I get satisfaction because it cost so much? No.
In fact, it was very hard for me to convince myself to shell out $300+ for a knife. I had never spent more than $100 on a knife before, but I wanted a Ti- framelock. Of all the Ti-framelocks out there, I liked the looks of the Sebenza the best, plus, the reviews online were largely positive
