There is an app for iPhone and iPad called Manual that lets you control the aperture, shutter speed, color temperature, focus, zoom, etc. Another app called VoiceSnap lets you trip the shutter with a voice command. Unfortunately the apps don't seem to work together. If you are using the former app, you can trip the shutter with the volume switch on ear buds when the pad/phone is in camera mode.
