Here is a Chef Knives To Go Kohetsu HAP 40 gyoto 210 mm doing its job. Lazer cuttng tri-tip, (then sticking into the butcher block).

Another User. Spyderco PM2 with S110V at 15 DPS to 600 Congress SC and stropped.






Over an hour carving a walking stick. Still sharp enough to easily slice cut phone book paper. And with only five strokes on a loaded strop brought back to very sharp.
