K01, 2, &3's

Lokelani - We've been using MBS-26 on most kitchen knives from '81. We're considering also using VG10 in the future.
BTW, the prices hae been raised by the maker on the kitchen knives for Y2K and the Yen has taken a 15% hike in strength. This amounts to a 25% increase. As a result of this increase, we will probably not go ahead with the re introduction of the test knives; K01, K02 K03 or the plain edge K04 & K05. If these models interest you, you may want to get them while you can.

Then there are all the people out there who think that a $50 msrp chef's knife is terribly expensive, have no concept of good steel, and don't consider edge holding desirable, becaust they're afraid of sharp knives!
I haven't kept a tally, but I think that everybody who has bought any Pro Culinaire knives from me has been somebody who was already a fan of Spyderco and comparable sport-utility folders. I put some into a local meat market on consignment a month ago, and so far all of them are still there. Apparently most of their customers see no reason to pay more than People's Republic prices for People's Republic quality.
Why do I feel like a missionary surrounded by heathen?
I even meet "knife people" who carry high-tech folders and own expensive custom hunters or fighters who have low-end knives in their kitchens.
VG10 kitchen knives? I want some! So say we all???

RJ We've found that MBS-26 is every bit as good as VG10 in edge taking, edge retention and corrosion resistance.
