This is very interesting. I had seen the Katz knives advertised a long time ago, and liked the designs a lot. However, I figured the "80" in XT80 probably meant .8 percent carbon, and XT80 would be something similar to AUS8 or 440B. When it comes to stainless knives, I won't buy anything made with a steel that ranks below 440C.
Does anyone know the actual composition of the XT80 steel?

According to Sal Glesser (you may search forums for ths) XT70/XT80 is AUS-6 and AUS-8, by composition. He reffered to some analizis they did in Spyderco.
However my friend sad that in side by side field test Aristokat (bigger model of Lion King) shows that XT80 far better then 440C and same or better then ATS34.
I can explain this only by special processing used in Japan - something like Electro-Slag Remelting used by Hitachi Metals for YSS which fine solidification structure of steel (this is why ATS34 different then CM154 even with same composition, as I understnd in US some vacum remelting is used instead) or something like this ().
