I use this one from Gerber.

It's a blunt tip which is somewhat forgiving if you use an inflatable. I have it attached to my vest, and it has been very reliable over the last couple of years. It's been to the gulf and down many rivers without showing any signs of rust.

In fixed blades, Moras in stainless are very good knives, inexpensive, and available in bright colors, or less conspicuous colors.

The 545, with it's bright blue handle and stainless blade (Sandvik 12C27 as I understand) is a great knife and very compact. Is is VERY pointy.

I use Myerchins. Great knives, really keep an edge.

Ta tell ya the truth, an inexpensive all stainless sailing knife with a sheepsfoot and a marlin spike will do you fine.

If you are talking fixed blade, gerber has a good lineup with synthetic sheaths.

For fresh water, I like one of the Bark River knives in 12c27.
I really like the Classic Lite Hunter or , if you want some thing a little smaller, the mini-northstar.
Do you take along a small ax or a folding saw?

A stainless mora is a great kayaking knife. The 760 Craftsman is my choice.

I carried one of these dinghy sailing for several years, stood up well, held an edge, and relatively little rust when maintained properly. One of the best things out there for rigging. Might be a little large for kayaking though.

I know TOPS knives had one of their ALRT knives in a package designed for kayaking. Came with a signal mirror and a whistle if I remember right, plus the knife and sheath are small and compact.
