Looks like they were seating/"bladewhack" tests on the rubber mats. Notice they made final adjustments to the knife and tightened it down after it checked out. Then on to sharpening & buffing stations.

It was a cool video that makes a skilled trade look sort of easy.

Yeah, Thomas as "Jimmy the gent". One of De Niro's better roles IMO. The real "Jimmy the gent" http://en.wikipedia.org/wiki/James_Burke_(gangster) .

Thomas amazes me at times. He's been around forever doing something and he still looks pretty young. You can tell when someone likes their job. They stay younger longer.
