Good evening!

I am very happy with how this one turned out! This is my version of a Kiritsuke knife (this one is a bit smaller than traditional, and I did an S grind instead of just a flat grind.) this is a single bevel, right hand oriented S grind, made for precision cutting and excellent food release.

This knife is made from Nitro-V stainless steel and comes in with an overall length of 10 3/4 inches with a razor sharp 6 inch cutting edge. The blade was heat treated and tempered in a digitally controlled Evenheat knife kiln. It was air quenched in aluminum plates.
