I thought I'd start a photo thread on here because it seems that there are a lot of people intrested in kitchen knives. I posted these pics in a couple of threads, but here is my Al Mar Ultra-Chef 8" that came in the mail today. I'll post some pics of my other kitchen knives when I get a chance.

Between that and a 4" Deba I seem to get just about everything done.

Really only break out the yanagiba on turkey day and the nakiri when making "sue-chi"
 
Here are some of my other kitchen knives. One is a Henckels Santoku 7” that I have had for about 10 years and the other is a 3” Shun 0700 paring knife. I get by pretty good with these, but I may still get that “Good Cook” brand 5.5” serrated knife for bread. I just miss having that knife for some reason.

OK, you need to explain why these have not arrived at my house!

Excuse me? Payment?? Look, splitting hairs like that is not a good business model.

I like all of those, but especially the top one. What is the handle material?

The top one is handled in mesquite... Idk IF I spelled that right?
It's a fairly durable wood. The knife was made to be a general purpose utility knife. He often brought it with him to cut up sandwiches at lunch.

Stayed sharp forever, pretty much. The markings on the blade were from heat treating. It's High Speed Steel, around 64-65_HRC. Crazy Hard!

They are all gorgeous guys - they put my budget c**p to shame haha !
If you like them, and they provide service, they are not coop (I think that's what you meant, although I think that autocorrect is losing its mind).
I think, however, that if you put the requisite 4-foot handle on the Bushman, you're going to have a logistics problem in the kitchen.

That cheered me right up Aardvark - thanks mate - haha - quite a few of my efforts are a foot and a half long and some are two and half foot - like kitchen bayonets haha !
 
A kitchen bayonet will put the fear of (insert your favorite deity here) into any swedes that wander into your kitchen. Note that this is not a slam against any Scandinavians, "swedes" are simply undercover rutabagas. Although, a 1000 years ago, the cry of "help me slice up some swedes" may have provoked a different response than "sure, where is the cutting board".

I like your knives that use the semi-bulbous shape for the handle. They're in the direction of the handles on Spyderco Moran Featherweights or some of Murray Carter's knives (plus others I'm unaware of, I'm sure) and, interestingly enough, some ethnic potato peeling knives I seem to remember seeing online years ago. I've tried a few knives with that elongated 🏈 shape & liked them. The bulge fills the hollow of the palm nicely and there's a lot of contact area which lends security to the grip. You've managed to smoothly integrate it with the shapes of your blade profiles. Keep up the good work. 😎
 
I`m a mongrel - half Polish / half Russian - but mongrels live longer and have better temperaments - cheaper at the vets as well lol !
I like big 4lbs choppers and 3lbs 20 inch scissors - I`m mad.
When the zombie apocalypse comes I think I have enough sharp toys to play with lol.
 
Crag the Brewer, Another wood for scales you may want to consider is ipe. It's dense, hence heavy, & extremely strong. Exceptionally wear resistant. Often used for decks & other outdoor applications, so readily available. A friend decked the trailer for his metal tracked excavator with it. So it's super tough.

Downside being that it's a rather plain looking wood. At least what I've seen of it.

Edit to add: As with lots of other tropical woods, toxicity of the dust when cutting or sanding it requires remediation measures. Lots of online info about it. Caution is mandatory!

When making this knife for a fellow BF member, all I can think of describing It as like "holding a potato....but in a good way."
