Kitchen Cutlery (Pictures)

More of my kitchen collection.

Top to bottom. Vollrath made in Japan steak knife, Chicago Cutlery made in the USA paring, Solingen Cutlery brand Germany paring and Warther paring. This last one has "E Warther & Sons Dover Ohio" very finely engraved and something that looks like a circle and other mark near the handle.

Thin flexy Capco made in Japan paring knife and Opinel bird's beak.

Masahiro honesuki with single right hand bevel.

Unbranded very light cleaver/knife only stamped "Good Quality Stainless Steel" near the handle on one side and "Japan" on the other side. The blade is etched "Toyota Processing Center Portland Oregon Jan 27 1977". The blade looks to be about 1/16 inch thick. And lastly a Kaicut made in Japan serrated bread knife.

I posted these a while back in the Shop Talk, but what the heck, I am still pretty pleased with them. Mind you, the black handle isn't one I would repeat, at least not on something this size, I find I am often holding it quite far back and it isn't really good ergonomics like that. The blue handled one works great where ever I hold it. The little one has an S-grind from a 10" wheel and a lot of hand blending. Edge is fine enough to flex on a thumbnail, cuts like crazy. Since this photo I have ground it to be pointier, and it is improved.

Just added this (RIGHT) Fujitora (Tojiro) honesuki (FU-803) 150mm clad VG-10. Blade measures 5 3/4 inches. Very similar to my (LEFT) Masahiro honesuke (13006) carbon steel 5 5/8 inches.

Both have right hand single bevel blades. Masahiro has a barely visible edge bevel on the flat side - Fujitora does not. Fujitora blade is noticably thicker and bolster tapered slimmer than the Masahiro. Handles are otherwise about the same thickness, the Fujitora just a little longer. Both feel very good in my not so large hand. Like the Masahiro, the Fujitora was very sharp out of the box.

Fujitora and Tojiro are made in the same factory in Japan - Fujitora is the name under which the knives are marketed in Japan. I bought mine from a seller in Japan for a very reasonable price just over $61 inc TX tax, free "promotion" shipping, normally hust under $20. Great knife for the money.

Two more ... and probably going to be the last cheap Japanese knives I buy in the small to medium size category. Good beaters, and I can leave them out in the kitchen for anyone to use.

Masamune 5.3" petty, molybdenum stainless, resin handle. And Masamune 5" Santoku, same steel with bolster, resin handle. Usual finish for the price range, cheap from a seller in Japan I have bought from before. Steel is probably good quality for the type and both quite sharp out of the box.

Another Japanese petty. Masahiro righthand single bevel 4.7 inch Japanese carbon steel in the same series as my honesuke. Feels great in the hand, agile with good control and very very sharp out of the box. Really like this one, zips through onion...

Fujitora (Tojiro) single bevel honesuke 5 3/4" VG10 made short work of a cabbage and onion for a (not quite authentic) Irish bacon and cabbage stew. Really enjoying using this knife. Favorite Chicago Cutlery parer cleaned up and divided the potato...

Did a new G10 Octagon handle with White, Blue and Grey G10 for Current for one of their relatives as a gift on a 300mm stainless yanagiba. Current Composite did the handle scales themselves (white ferrule, some laminated blue, white and grey, and the blue, white and grey Maze pattern, and blue liners) and they came out really nice.
