What a pleasure it is to use a properly made knife.
I have made knives for several decades. Only recently did I get the idea to
replace all my every day kitchen knives with some that I made. this is the most used knife style knife in the house.

154CM stainless steel properly heat-treated and cryoed.
7 3/4" long blade, 1/8" thick, 5 1/2" handle, 13 1/4" overall, 2" wide.
Handle scales are black paper micarta, with Carmel micarta bolsters. set with marine grade brass pins.
$125.00 will get it delivered with insurance in the USA

Nice knife, what is the angle on the blade? Would you consider it a Santoku blade?

I would not consider this a santoku knife.
Traditional French chef's knife.
The knife starting from 1/8" thick and 2" wide has a full hight flat grind. I took the primary bevels down till the edge was only the thickness of about 3 sheets of typing paper. The very small secondary bevel is at about 20 degrees.
But since I grind and sharpen by hand I relay an not sure of the precise numbers.
