Kitchen folders - What We Have

My favorite folder in the kitchen has been an old Buck 560. Titanium handle and stainless blade, good for slicing. Easy clean up, hot soapy water won't bother it at all. The only thing it doesn't have is a dropped edge, which would be a nice feature. Out of production for years, but still available if you know where to look.

Current production knives, an Opinel #12 would be very good as long as you seal the handle properly first. For something all-metal, I like the suggestion of the CS Pocket Bushman. Not much on looks but I bet it would do the job just fine. If you like the unusual, consider a douk-douk.
 
I'm thinking a CRK, with a blade shape of the Insingo, yet with the blade wider (not thicker) so that the cutting edge is "lower" so you can chop and dice like a kitchen knife. Maybe make it a 4" or so blade.

THAT would be as good as it gets IMO.

It's an EKA Camp, featuring a 4,7" Sandvik 12C27 blade (Kataba ground), lanyard tab lock and polypropylene handle slabs.

Push cut?? No problem :).

I have used a Buck 110 in the kitchen at home as well as at the cottage up north for many years with flawless results. And it's a "real" knife as far as I'm concerned! ;)
 
I take it that you mean 'lack of tactical look', right? But I fail to see how does this fit in with a kitchen knife. I mean, how 'tactical' do you need to be when you are in the kitchen? :confused:

The REAL knife is a kitchen knife, because WE USE IT THE MOST. Of course it's possible to use even a (real) axe to slice salami :) Again the topic is about that we can't buy a REAL folding (kitchen) knife, but have a huge selection of UNREAL knives.

Honestly I think it's because it's not healthy, nor is it practical. If it was, we'd already have them.

I don't want to use a folder in the kitchen. Too many spots for bacteria to hide and collect that a good washing will not take care of.

Imagine using your folder of choice to cube some chicken and then use it to dice potatoes. Makes my stomach turn and I know it will be more difficult than just grabbing my kitchen knife that was made for that specific duty.
 
Dip your knife in pure grain alcohol.

Mike, you are absolutely right - the best ever kitchen knife is a traditional "fixed blade" Henckels (or ...) knife. But if I camping (hiking) guy who needs a folder - just for "DIVERSITY" maybe - Can I get ONE? Looks like A.G.Russel and Germans only think about me. About me? - maybe about us? WHY? Actually it is the only one question I asked. And I got advices that I can use Military, Buck knives. Of course I can, but .... (read my first post). I would like to see a care about us NON-TACTICAL GUYS from famous and respectable knife makers. We are good people too :)
 
I hear you on that one. Camping or what not I take a fixed blade that does well at everything but not one thing (kitchen duty so to speak) excellently.

A burchtree bladeworks folder would be awesome for this :D
 
Just my .2 cents, but I use a Cold Steel Kudu as my outdoors kitchen knife. Works great, is light and slim in a pocket, and very easy to clean. For $7.00 or so you can't go wrong.
 
I really want to get one of the Chris Reeve kitchen knives. Many of the ones you guys have posted look awesome
 
Here's an idea for a foldable yet hygienic kitchen knife: the blade must be removable from the pivot by hand. People need to be able to disassemble and reassemble the knife without tool, or at least do it with just a coin. This way it's easy to take it apart in the field for thorough cleanup with soap and water.

Coincidentally this also makes for an ideal hunting folder. All the blood and goop would be easy to wash away.
 
I use a Victorinox one hand sentinel for food prep sometimes. The serrated blade does great.
