Kitchen knife set - coming soon

Yes - me too.....but every once in a while, a well-intentioned in-law will....:(

So, for me, it has to be able to survive a trip or two through the dishwasher. I actually have put 8 of my knives through the dishwasher on an almost weekly basis for the last year. I feel pretty good about the handles staying in place with G10...great stuff.

Too true!
Family was in town to see the new baby, and I woke up to a very clean Henckels pro S's in the dishwasher. NOthing happend to it, but still..
So I ordered a Mater. It rocks!
Can't wait to buy the Set!

Me too.....:D  :p

I'll post pics as soon as the blades get back from waterjet...

I'm interested in a pass-around. I have some high end kitchen cutlery (Harner, Hattori, Takeda, etc.) and would love to be able to provide feedback and see how they compare. *insert chest thumping if you'd like :D

I have changed the profile of the handle a little bet - haven't had them cut out yet. Still testing prototypes.

Will keep you guys posted.

Thanks!

Whats the difference between a Santoku and Chief Knife. Having a Nessie/Cleaver hybrid in the kitchen would be nice.

A santoku has a more broad and dropped tip...kinda like a sheeps foot profile, but a curved edge rather than a flat one.

A chef's knife will generally be longer and more of a spear point.

I do have a Nessie/Cleaver hybrid - the Monster Nessie. But it's much more on the cleaver side. :D

This Santoku will be *tall* compared to others...and should work well at both tasks.

Me too!! :D

I am still playing with the prototypes. As soon as I am happy with them...I'll post up pics.
