Too small to be called a chef and too big to be a paring knife so I will just call it a kitchen knife 
1095 high carbon steel. I make most of my kitchen knives from 1095 because it holds an excellent edge, is easy to resharpen and just seems to slice better than a lot of other steels.
I heat treat in a digitally controlled furnace using three normalizing and two tempering cycles to reach a hardness of Rc 58-60 and a fine grain structure.
A very slight convex grind
Professionally stabilized curly maple handle with red carbon fiber spacers
Overall length: 9 1/2 inches
Blade: 5 inches
