All I can say is WOW! i wandered upon this YouTube video last night that was about making salt cod. Around the 2:00 mark this beast appears. I have never seen a kitchen knife like this.

Anyone here familiar with these? Anyone own one? From the looks of the handle it looks like it might be a Dexter Russell commercial kitchen knife but I didn't see anything on their website. However lots of companies use that injection molded HDPE handle style on their commercial blades. Anyow. Check it out. Share any info you might have. Im kinda excited about this because I'm 50 and its been an awfully long time since I've seen anything edged that is totally new to me

Looks like the Italien Messer that baryonyx (42 blades) carries. It's German, but I forget which maker.

The Italien Messer is a full-blown cleaver, while the Trimming Knife is more like the one shown. The one in the video looks to be ever-so-slightly different, but just another manufacturer's version of the same class of knife. I use one of the Trimming Knives in lieu of a chef's knife and it's a heck of a tool.

Looks like the company shown is Spanish, which isn't surprising. Large, broad slicers in this style are found in Spain, France, Portugal, Italy, etc. and are used as slicing and trimming knives on all manner of meat, but particularly fish.
