peter, i use ats-34 and 440c for all the culinary knives. even with micarta handles over time it can ruin the epoxy, i tell my customers if they just hand wash and dry my knives will look great for years to come. also the stuff thats in the detergent can add wear to the working edge as well. phosphates etc,
