Kitchen Knives needed

I've got the Henkel Pro S series of kitchen knives, and the Santuko is about all I ever use, except the paring for little jobs... Those two knives are almost all you need, maybe add something about five or six inches for variety... The Santuko is relatively thin and is heat treated very hard (you can hear it "ring" when you steel it) so its not a bone chopper...

Henkel has a lot of different grades, the Pro S is the best, I think... great knives... recommend them highly...
