This one would make a great prep knife. I gave one of these to a friend that is a sushi chef and he loves it. I love it too because I get the employee discount when I visit him. Anyway I put a distal taper on this one with my Fred Rowe bubble jig and it seems to give the knife a perfect flex. The Cocobolo is from Gerst Hardwoods and is stabilized and coated with polishing wax then buffed. I will now offer a kydex sheath or leather sheat with these for an extra $40 for the leather and $30 for the kydex.

Kitchen Super Slicer in AEB-L/cocobolo

.085 Aeb-L stainless steel
5 3/4" blade, 10 1/8" total, 1 7/8" tall
Bos heat treat & cryo @61rc
High flat grind and handrub finish to 320 grit
Ground to .005 then put a 20gps second bevel. This knife has a really nice flex from the distal taper I did.
Stabilized cocobolo and steel pins holding it together
Od green g10 liners
Kydex or leather sheath optional
