This is a kitchen utility knife I like to make. It's a bit more than your average petty knife, and a wider blade than many of the smaller utilities.
These also make good dedicated camp kitchen knives and meat knives for the field.
Overall this is 9.75 inches. The blade is 5.2 inches. .095 thick at the tang tapering lightly to .089 just before the steeper taper at the tip. Steel is 15N20 with a differential temper, finished to 600 grit and lightly buffed. The blade has a shallow convex grind from about 1/3 of the way up the blade at the thickest point, with a final edge bevel put on seperately. The edge bevel was put on at 10 degrees and then convex honed.
Handle is jatoba with a multi coat linseed oil finish and after full drying a tung oil top coat. Pins are stainless.
comes bare, but we can put together a slip cover sheath if you are going to use it in the field for $10.
