Just as the other kitchen knives I have offered recently this one belongs to my Kitchen Workhorse - or just KW - series and is meant for business as you don’t pay for a more sophisticated finish nor have to worry much about mantaining it. Also, thé chisel grind is very easy to sharpen and also to eventually reshape.
This particular one, a kamagata usuba, is not an usual model among Japanese knives, being a version of the usuba used in thé région of Kansai,in Osaka, and is considérés a more versatile model that thé usual usuba. Mine is a little pointier than most you Will see as I believe this adds to the knife versátility.
This knife has a 8" chisel ground, sellectivelly hardened 1095 steel blade and an octagon handle made of Beautiful claraiba Wood with a contrasting piece in jacarandá da Bahia.
