If you never Heard of this model of Japanese knife, don’t worry because it is very rare and you Will not find many références any where.
Its a Jinari (never heard of it, Google it and you can find some références, but very few) . This is the second or third I have made.
My version of the Jinari has a 19cm long, chisel ground, sellectivelly hardened 1095 steel blade with the typical spartan finish of my Kitchen Workhorse séries and an octagon handle made of beautifully figured imbuia Wood with a détail in jacarandá da Bahia. It Goes for US$ US$ 150.00 plus US$ 25.00 for worldwide shipping.
