Vector Drawing for the win. Rather than the pixels used in Photoshop and other image editing programs, vector art has lines and points which you can click and drag to quickly reshape your objects.
It's more like 2d sculpture than drawing, and is very forgiving of mistakes.
I use Adobe Illustrator.
Here is record showing snapshots of the evolution of a vector art knife design over the course of a half hour or so.
Starts out rough...refined the handle, and came up with 3 blade style varients.
Some day when i get this design just right, I'm going to commission a custom maker to build it for me.
