Knife King Knives

1075 is a simple carbon steel with 0.75 percent carbon.
1095 is similar, but with 0.95 percent carbon.

The 1075 will be a little tougher. The 1095 will hold an edge a little better.

Adding my two cents to this old post because it may help someone else avoid being disappointed.
These are what I would call an art knife, built to be looked at, never sharpened or used.
Ergonomically & functionally useless.
Don't expect to actually use one to cut something.
The knife I received was the flimsiest most useless tool I have ever seen... Returned immediately.
 
A quality maker turns out knives that consistently fall within the range of the acceptable. These sort of folks, many of whom now claim to have knives - or at least blades - made int he UK of US-spec'd and Swedish steel, can produce an acceptable knife, but you can't count on it.

Incidentally, the UK is not a place that I would expect to produce consistent good quality at dirt-cheap knives any more than the U.S. First-world costs would bar such low prices.
