Kits are a good way to start out. They give you a good understanding of how the knife goes together and the steps taken in making them. Go to www.jantzsupply.com they have quite a few kits on their website, I think there's even more in their catalog. As for steel, different kits are made with different steels, just pick a kit that has the amterials you want and the steel that you like.
I agree. Jantz has some really nice kite. They usually use 440-C and some ATS-34. I did my first kit, the double edge boot knife with 3" blade. It was pretty easy to make and was fun to do. I think kits are great for people who don't have the time/skills/equipment to forge, grind, heat treat, etc their blades.
