It is totally up to Disney to let people carry knives or not on their property. I'm not sure, but I would say under the current climate the answer would be no.
The Orlando parks run hot and cold on knives, but the Cape (space center) is 100% against them. Just leave your knives safely in the car and enjoy the parks. Knives may be useful in the real world, but if you are paying $50+ a day to visit fantasy land, you might as well relax and enjoy it.
Actually, unless it's changed in the last three or four weeks, Disney World was okay with knives. Having said that I wouldn't carry anything but a SAK or other innocent small folder. Sea World has a pretty strict policy if they catch you. Universal wasn't using metal detectors but I don't know what their real policy. If you could do search on Disney, Sea World etc. on the main discussion board you would find several links. The easist way to really find out is to email the parks. Most of them seem to be pretty straight forward about their policy when I've talked to them.
