Make the trip out to Ben Wheeler, TX and see Mr. Dan Harrison. He's a wonderful person and will to talk knives with you. Do yourself a favor and stay in DFW long enough to take his class. I'm in it right now, and while I thouroughly suck at grinding, I'm light years ahead of where I was a month ago even after only two lessons.

look for the Texas knifemaker's group on facebook. Lots of DFW guys. They also just had a get-together yesterday, and have plans for more.
