Knife recommendation (1st fixed blade)

Out of the 2 you listed I say S1- I love ESEE blades but that one is a little overkill IMHO.

As 2 added ideas (can't help myself) the Scrap Yard S5 is a great all around knife and is within your budget. Also Koyote Knives rock for the woods!

That and there are some nice swamprat knives that might fit what you are looking for with a very good warranty.
 
If I go with the RC-5, should I have the edge re-profiled to make it perform better?

ESEE knives are bombproof.

You don't really even have to worry about the rusting of the 1095. The only vulnerable areas are the edge and the engraved logos. Unless you keep it in extremely wet conditions, light usage will probably keep the edge rust free.
 
the ESEE-5 comes with a nominally 40 degree inclusive bevel (20 degrees on a side) - since the final sharpen & hone is done by hand, it may be off by a degree, but it still cuts fine.
If it's not hair popping sharp from the factory, a couple light quick passes with a diamond stone or on a strop will clean it right up.
