Knife recommendations

Mora, +1 Good sharp knives in stainless and can be replaced for not much dough.
 
SYKCO or Varusteleka. Reseprine or Terava full coverage rubber handles should be great in cold climates.
 
Some nice fillet or boning knives.

A Martini or something?

They do really good presentation knives that look amazing.or cheaper ones that do the same job.

(OK. This one is a rapala. But sane sort of thing.)
