I am visiting the big island Hawaii and want to know if there are good cutlery shops or places carrying knives.

Can't answer your question about cutlery shops.But there is a custom maker south of Hilo.With all the eruptions I don't know if he is still building stuff.
You are gonna love the Big Island,My wife and I were there last November.About the best 17 days of my life.

I had an opportunity to go to Waimea today as the storm subsided and met a knife maker Hiko Ito there.
I forgot to take pics there but saw his knives.
