Knife sanitizing/dereasing/cleaning solution?

I'd wash in Dawn dish detergent to get rid of the grease.
Hair dryer on high air low or no heat to dry.
10% bleach solution allowed to dry will sanitize anything.

Canned air: agree may not get all moisture out, but it helps. Other options: oven on low heat, silica gel (desiccant), to name two. If you have compressor at home, bitterant no longer an issue.

Agree WD40 CAN GUM up the works IF YOU are constantly applying it. Just a little post knife cleaning shouldn't be an issue, I would think.

And most knife hinges - as far as I know - require some lube. So what light film lube alternative - oil or grease - is there? Lithium or axle grease or other would be worse IMHO.

Alcohol allergies: to isopropyl only or all types? Do they still have a problem if using nitrile or latex gloves? If isopropyl only, try Everclear (or Chinese baijiu as some have higher octane than Japanese sake!)

Solvents: Carburetor cleaner is another option. Don't remember ingredients. However, wasn't damaging the scale an issue? If so, this and other industrial solvents make not work; some likely to melt the plastic, others mar the finish.

Sanitizer: I have never seen Benz. Chloride in high concentrated form; only diluted (3% or so). One fluid form, as opposed to cream or gel, is J&J's No Hurt disinfectant wash. Its in a baby blue bottle and can be found in the first aid section of stores.

Anyway, my thoughts on the matter. YMMV.

ETA: Benz. Chloride - Brand above is wrong though company (J&J) is correct. Brand is Band-Aid Hurt-Free Antiseptic. Benz. Chloride concentration is 0.13%. In fact, my statement of it being up to 3% is likely too high. Would need research that.

Soak 20-60 mins. my knives in ammonia usually loosens most garbage ,grease-then I wash with dawn dish soap,for tree sap /adhesives,tape residue use lighter fluid .....do not use acetone on plastic swiss army knife handles ,very bad
 
For sterilizing and cleaning I would say Hydrogen peroxide, then rinse off.
Then after some Break-Free CLP, if you needed/wanted.

For just cleaning I love frog lube solvent(not the CLP), then Break-Free CLP after that.

Good old soap and water is one of the best too! like others have said, Dawn...great stuff.
 
For sterilizing and cleaning I would say Hydrogen peroxide, then rinse off.
Peroxide is corrosive to steel. You may not notice any damage to your average stainless steel blade at typical brown-bottle concentrations of 3%, but it's happening. 304 and 316 stainless steels (even with their 18% chromium content) are vulnerable so don't even think about it with carbon steel.

Hexanes should be a good solvent to remove WD40 residue and leave a knife dry. No water content whatsoever, extremely quick-drying, similar toxicity to heptane but significantly cheaper. Use must be in a well-ventilated area and nitrile gloves (better than latex) are highly recommended. I've never used hexanes to remove WD40 specifically but it's my solvent of choice for cleaning lab glassware that's had vacuum grease on it, so it should do the job handily. It won't dissolve or react with most types of plastic, but it also won't sanitize... I'm not sure that there's anything to clean AND degrease AND sanitize AND stay dry AND be chemically compatible with all knife materials... isopropanol (>91%) probably covers the most bases.
