I hope I'm not breaking any rules by asking. What could a restaurant expect to pay per knife for sharpening?

onsite? or pickup and deliver?
I'm guessing $10 each...upto $20 each
but I really don't know :D

Hum, I always thought chefs would sharpen there own. Maybe I should talk to the places around here.

I didn't have time to wait for your responses. I had to go pick up the knives. I quoted him a buck an inch with $2 per knife to remove chips and nicks if necessary. He has a pile of knives and will likely have a steady need for sharpening. Good thing his cooks treat their gear like crap. On the positive side, his guys probably haven't seen knives sharpened like this in a long time. Bad side is they probably won't stay this way too long.

This just screams workman's comp , " lol "

I charge $7.00 per knife for Restaurants. Over 6”.. your $1.00 an inch is close to what I charge for the private Chefs & homes I do .. I don’t do many restaurants because the knives are usually beat to shit!! Just a few that I know and have a good relationship with—— .. Most are a hassle & a pain to deal with! I rather sharpen for Private Chefs and homes...

Yeah, this guy's knives are beat to death but I told him $2 per knife surcharge for repairing the nicks. He wants to do a rotation now where I would pick up a batch every week.
