There are so many good quality knives available that it is hard to suggest just one but for sharpening there is only one option IMO and that is an EdgePro Professional. Yes it is a bit spendy but you can suck it up buy it now. Or do as I did spend twice as much trying to save money buying cheaper less effective units that put OK edges on your blades.
When you finally get tired of wasting your money, using cheap units that are clumsily to use, wear out, and break, after giving you mediocre results, and you are ready to have really sharp blades sharpened by a professional you can get the EdgePro Professional. Quickly and easily putting hair splitting scalpel sharp edges on all your knives every time no matter what steel or dimensions they are. A rock solid system that will last you a life time. It is a solid metal professional grade bit of equipment not a plastic gadget. Professional grade because a EdgePro Professional is what most good professional knife sharpeners use.
Buy Quality cry once, buy cheap cry often.
