I am planning to build a quench bucket similar to Chucks diagram. Currently I just have a water bucket directly below the grinder for metal, and run the shop vac for non metal grinding. The vac goes outside in the yard after each session just in case something was smoldering in there. Won't cause much harm if the vac burned up out on the gravel driveway away from the house. As the count said I can't just blow all the air outside at -40 so I have two 20" box fans hung from the ceiling. I used a few pieces of siding j channel down each side and along the bottom on both sides of each fan. A standard 20x20 furnace filter drops into the channel on the intake and output side of each box fan. It's amazing the amount of dust it picks up from the air.
