Nothing really! There are knives in gun shops is what we have here. Sportsman's Warehouse has a few, Shooters Vault, and Shooters World have displays. No dedicated blade stores though.

There is a decent shop in Scottsdale... Penchetta Pen & Knife. It's in the stripmall on SE corner of Frank Lloyd Wright & Scottsdale.
