Hello,

Where I can find knife shops in Paris France?I would like to find folders of the Opinel mark mainly.

Knives from all regions in all price ranges. Plan on bringing a towel to wipe the drool off the window.

Opinel is like finding Old Timer here, ie pretty common. If you can't make it to the above, try some of the tobacco shops in the French Quarter.

there are knife shops all over Paris. Just check a phone book under "couteaux" once you get there. Plenty of Opinel & lots of european automatics. US knives will be pricier than they are here though.
 
Man does THIS thread go back! Way back. One of the best knife shops in Paris is run by the Kindal Family. Their shop, at the vortex of two angled streets is very special. Just plunk Kindal, Paris into Google for all you need to know. First of all, it is still family owned and operated. The shop will draw you in like a magnet. The daughter is usually behind the counter, but sometimes you can get her mom, an artist named Maguey to help you. Check out the special edition Opinels for the best prices I've found. I have one with chestnut wood stock. It is a great shop. Don't pass up their oyster knife if you are a chef as I am. VERY nice people who really know their blades.

Well I spent the day going to five of the knife shops in Paris. Fabulous - I saw one 3 inch blade folder for 5000 Euros - what would you do with that!
I asked about the steel used in the knives. After being told that "we speak French in Paris not English", the guy warmed up and said that the stainless steel is all 12C27 because the EU made it mandatory. I tried gently to ask about various steels but he retreated into Gallic indignation.
Is that true about the European Union and 12C27?
 
No, that is total BS. You can and most makers and companies do use any and every steel alloy in the world.
 
Spot on Jeff. I have been there twice over the last few days. (Also I went to another five knife shops in Paris.)

The Kindal family win ( I bought a coticule stone from them). Interesting shop, varied and fascinating knives. They know the makers personally as well. And the family are 'tres charmant' to boot. It is on the Rue de Constantinople just north of St Lazare Station. Plenty of music shops nearby.
 
This time I had to buy a knife - how can anyone resist buying something from this family run business. It is like magic. This time a little Ohta. Beautiful knife. Steel is so sharp.
