One reliable method is to keep your knives in a storage device with a low-power heat source (light bulb, etc.). This assures that the knives are always a bit warmer than room ambient temperature, thus preventing any vapor condensation.
I keep the knives that I care about in my gun safe that is equipped with a goldenrod. It is the same principle as a light bulb, produces a little heat to eat up any humidity in the safe.
