This is a specific knife made by several craftsmen. The blade was forged by Davide Steri, a Sardinian cutler. The fly chiselled by François Seychal, assembly by Pierre-Yves Joyeux (La Clef des Champs)

I like that you call them cutlers. My last name is Cutler....somewhere down the line there must have been someone making knives. Maybe it's why I'm a little obsessed with them.

yes it's a Laguiole with a Sardinian blade

So it's not a “real” Laguiole according to the current PGI (Protected Geographical Indication) criteria set up by a Laguiole knife syndicate.
