Knives curving when sharpening

May have never been straight. If the ones above they are obviously far from their original shape.
Yes. The vintage Blanchard 1&2 were curved however I believe the modern might be straight. The new blades are HSS, not sure about the vintage. I personally use a Japanese style skiver to bevel leather edges for sewing and a curved Osbourne #2 for thinning, the curved blade makes thinning a breeze, works pretty well for beveling as well.
 
It really doesn't matter at this point, they all need to be re-profiled and if they were mine I'd do one straight, one rounded and straighten the edge on the angled knife. I'd probably use a mill file to get the shape without overheating the steel and go from coarse bench stone through stropping to refine the edges.
