knives designed for edge-in grip

I imagine there are very few with that even as a primary consideration.

That being said...

Just about any straight knife, with a grip that does not include finger grooves or ridges will probably do reasonably well.

First to come to my mind is the Emerson CQC7 grip.

And having used my Spyderco's in that fashion, I can say that they function satisfactorily in that way.

There was an old Blade articel about this very subject.
 
I've been very pleased with my Gunting in these grips. I think Bram said that SigArms acadamy was going to adapt the Gunting as one of their "official" knives and they teach these grips.
