Knives of the amish

I live about 5 miles north of a large Amish community. I've come to do business on a regular basis with a number of them and my Uncle works closely with several in building fabrication. Most of the ones I know use a plethora of different knives. I know several that appreciate more simplistic working knives like the Opinel, and Mora fixed blades.
