Knives that would meet your ideal if they only changed a few details?

Mine would be the Vosteed Corgi... if they only increased the blade length to about 3.4-3.5" and dropped the inlay. Also if they increased the length they would need to increase the height a touch to keep the proportions aesthetic. There are quite a few examples of almost ideal knives for me, usually it's a matter of size... what's yours?

Swamp Rat RMD - Choiless option would make this the perfect belt knife IMO (Drop point would just be icing on the cake).
Emerson Commander in Cruwear at 62-63 HRC would be perfect.
Hinderer XM-20 , does not exist, it would be incredible though (3.75 inch blade of .12 stock choiless Cruwear.. one can dream).

Totally agree about that swamp rat choil, I never understand that style of choil on any knife. My large pyrite has that choil and it stops me from using it.

Ever try the Project X ? A little thicker but no choil and exists in MC.
 
In general, it would be most stainless blades with needless coatings.

I would've said the Kershaw Belair, a little knife I just love for function, fit, material, and quality. I just wished it came in a clip point. Well, lo and behold, i think they heard me. Bought one right away.

I also really like my Case Marilla, but it's pretty thick stock, could use some serrations. Huh. Did that one, too. It's on my list.

Maybe those were inevitable. So now I'm thinking a little further outside the box, wondering if Buck would ever make the 110 as a compression lock flipper...
 
The curve of the flipper tab on the xm18. It digs into my knuckle in certain grips which is the only reason I currently don’t own any. Fortunately the eklipse is much better.

And the grip on the zaan. I think it’s one of the best looking knives ever but it just feels terrible in my hand. Particularly there’s no need or reason for that lockbar tab which is the main culprit in making it uncomfortable. I’ll still end up with one again someday.
