Recommendation? Knives to cut vegetables, gift for my mother in law

I have been absent for a few days trying to catch up on real life, so the knife decision and purchase is still pending.

I am still keen on adding a good, fairly priced Cheese knife, just because they seem groovy to have at I presume they cut through the hard cheeses well.
 
Opinel has two product lines of regular kitchen knives. One line, "Intempora," uses Sandvik 12C27 stainless with POM handles. The other, "Parallèle," is X50CrMoV15 with wood handles. I don't have personal experience with either product line.

They have a chef's knife and santoku in both lines, which could be used for vegetable chopping, depending on user preferences and techniques.

Many major knife makers produce kitchen knives of some kind or another, even if they are primarily known for pocket knives.



Opinel was mentioned in post 10, but only in reference to a folding knife. Do you have experience with their kitchen knives that might be helpful to the OP?
I didn't know that. They look like nice knives too! Comfortable handles and nice steel.
 
I also vote Victorinox. Another thing to consider is the material of her cutting boards. I have a glass one that dulls the edge much quicker than the plastic or wood one...
 
I can say only good things about Cutco https://www.cutco.com even do they seem to have a bad rep.
We own a 8 different ones, oldest ones are 10+ years, still razor sharp and cut soft tomatoes like butter. Also handle is very well designed and comfortable knife to work with. We use our butcher knife for stuff like sweet potatoes and it works just fine .
I know that they don't use the finest steel, however they seem to have a good heat treat and have far and away best and unbeatable guarantee out there. Not for last they are made in USA, upstate New York.
I honestly believe that their price is high, however I have yet to date had to send one in to their service. I think they are good and effective.
 
Hi James - forgot to ask whether you want your in-law to stay in your home longer or shorter, because that will affect my recommendation. :p
 
Victorinox and cold steel have some good offerings you should look at, If im not mistaken they both use 4116 krupp stainless which for the kitchen isnt bad at all and easily sharpens on my prolite. It holds its edge alright nothing amazing but most people say its simaler to 420HC which is decent in my book. Also they are very rust resistant that is really important when in the kitchen.
 
Tons of cheap choices on Amazon. 6" to 8" chef in stainless steel. If you can trust her to not be reckless, a ceramic knife holds the edge the longest. I got one from Harbor Freight for $12.99. Works great. Only for veggies and boneless meat. If you get a steel knife, better have a way to sharpen.
