Nice Cv! I've got a Böker Gamma coming soon that's very similar to the one. The other Böker ceramic I have kinda defeats the purpose if your going non-metallic, lol...I turned it into a nice money clip though(titanium handle with stainless pivot and lockbar)

If they are that brittle I am surprised if a professional kitchen would use them and risk a customer catching a fragment in their meal.
