you do very clean work! Can you explain, what does hardness "secondary" mean?

You can temper some steels low and high. (M390, Elmax).
Some steel can only temper high (Vanadis4e) or low (80CrV2).

For example:

M390 tempering low (250C) for better corrosion resistance - knife is softer.
When tempering in high temperature (525C) you will get knife is much more wear resistant.
Knife is harder and holding edge longer.
