Kyocera Ceramic Knives

Tallwingedgoat, I've got one for the kitchen and there it is just great. I especially like it for skinning and defatting fresh chicken pieces prior to cooking. I am very careful with it and have serious doubts about its toughness and ability to take abuse. It just LOOKS fragile. If I'm not mistaken, Maddog has some process that supposedly toughens his ceramic blades. I certainly wouldn't expect the same performance out of the Kyocera and to be fair they do not claim that their blades are tough or capable of taking abuse. In fact just the opposite, you are warned to take proper precautions against abuse. Also this, question has been asked before so you might want to do a search. Hope this helps.
