My new Laguiole from Fontenille Pataud. Walnut handle with some nice figure, 12C27 blade, 11 cm or 4.3 inches to us Yanks. Crocodile inlay purse/pouch. I'm pretty impressed with this knife. All the things you look for in a well made knife are there.
One of the complaints one often hears about Laguioles is that the lack of a kick on the blade would sometimes allow the blade edge to hit the back spring and you would get a ding on the edge. Gilles at Fontenille Pataud remedied this by having a "A solid bladestop is provided on all of our springs". It amounts to a high spot on the inside of the backspring which hits the tang where the kick would be on the knives we are familiar with. It's like the kick is on the spring instead of the blade. Those wacky Frenchmen.
