Languiole style carving knife steel recommendations

Hi,

I always wanted a Languiole style carving knife for Thanksgiving and Christmas turkeys so I've decided to make my own. As long and relatively thin as they seem to be, I'm concerned with warpage during heat treat. Any recommendations for steel choice? I currently have a O1, 1075, 1095, 80CRv2, 15N20, and 52100 in high carbon and AEB-L in stainless.

Personally I'd use aeb-L out of those, mainly due to preferring stainless in the kitchen. That said the carving knife I made myself a couple years ago is A2 and hasn't been a problem. Realistically I think you'd be fine with most blade steels.
