You need to go the custom route then, period. Why? Because you can have the knife made to whatever thickness blade stock you want, you can pick whatever handle material you want, you can have any sort of sheath or holster or scabbard you want, you can pick whatever steel you want at the hardness you want. You see what I'm saying? In this case, production knives for you will always be lacking in one way or 3, not fitting the bill, so a custom makes more sense and will give you a product that is to your exact specs.
